We make living apple cider vinegar in the Comarca Andina: unfiltered, unpasteurized, with its mother, and no shortcuts. Apples we would choose to eat, pressed by hand, fermented at nature's own pace.

There are no shortcuts in quality.

Bluma Andina was born in February 2025 in El Bolsón, Río Negro. We start from excellent fruit — the same apples we would choose to eat — and we don't rush anything: no water, no sugar, no additives. What ends up in the bottle is simply apple, time and care.

Amber, naturally cloudy, alive. Marked but gentle acidity; fresh, fragrant, with real apple presence and a long, rounded finish. The everyday bottle for dressings, marinades and your morning glass of water.

A living food

The cloudiness is not a flaw. It's the proof.

Our vinegar is neither filtered nor pasteurized. That's why it keeps its mother — the culture that transforms apple into vinegar — visible in the bottle, along with its natural sediment.

Industrial vinegar is transparent because everything alive has been removed. Ours is cloudy because everything is still there. Just shake gently before using: the sediment is part of the food.

The process

By hand, from start to finish

Harvest & selection

Excellent agroecological apples from the Comarca Andina, selected one by one.

Milling & pressing

Washed, milled and pressed by hand to obtain pure juice. Nothing added.

Natural fermentation

The fermentation follows nature's own rhythm. We don't rush it — ever.

Lab controls

Periodic measurements throughout the process, batch by batch, for real consistency.

Hand labelling

Each bottle is labelled by hand, with the fermentation and bottling dates of its batch.

El Bolsón, Comarca Andina, Patagonia

Between mountains, forests and berry farms, the Comarca Andina grows fruit of rare quality. This is where our apples come from, where the raspberries grow, and where every bottle is made.

Every batch is traceable back to the fruit. The place is not marketing: it's the ingredient.

How to use it

From the morning glass to the kitchen

A living vinegar works everywhere an acid note makes food better. A few places to start:

  • Diluted in water: one tablespoon in half a glass, on an empty stomach or before meals.
  • Vinaigrettes, dressings and emulsions with real character.
  • Marinades for meat, chicken and vegetables.
  • Pickles, preserves, chutneys and mustards.
  • Shrubs, switchels and cocktails that need balance.
